Class Description

New for 2023! The charlotte is thought to have been made in honor of Queen Charlotte, the wife of George III of England, and later popularized by the “Grandfather of French Cuisine” Marie-Antonin Carême. The two differing styles of charlottes are characterized by the cake that is used to hold in the cream fillings. In class, Chef Nate will demonstrate how to make ladyfinger sponge as well as a rolled sponge that we will fill with a homemade raspberry jam. After making a communal batch of pastry cream, we will make four uniquely flavored diplomat creams. Then, in rotating stations, students will assemble four of their own charlottes to take home and share.

A brand new class from Chef Nate, our newest Pastry and Baking Chef Instructor. He has worked at the Broadmoor for the past 18 years and is eager to share his passion and knowledge with you.
