Class Description
Four new recipes! For first-timers, or for those who have taken my other classes, you are in for a new chocolate delight. My new invention, the Tuxedo Truffle, will have you swooning as you indulge in silky black cocoa and sweet, white chocolate, married together in one crispy chocolate bite. The citrus peach truffle is another new concoction, smooth and fluffy, sweet and slightly tart. Brown butter makes its debut in my toffee chocolate truffle. To bring home the holidays, I have added a salted maple pecan confection with real maple syrup. Nuts can be omitted for those with allergies. During class you will mix, whip, scoop, mold, or hand-form the centers. Sampling is, of course, encouraged. While they set, I will teach you how to use a thermometer to temper your chocolate. Now the fun part: the art of enrobing—by hand—your centers in milk and dark Belgian chocolate. We WILL get messy! You will decorate your candies, put them in papers, and package them up in a festive box. You will take home over a pound of gourmet chocolates. Great for a gift (or for hiding). Also, this class makes a great Christmas gift for that hard-to-buy-for friend or family member.
Please Note: The kitchen will be very cool to allow the chocolate to set correctly. A sweater or sweatshirt is recommended.
This is a seasonal class that only takes place in December.
