Class Description

New for 2025! Imagine the lovechild between macarons and eclairs… the macalong is a larger macaron that you eat like an éclair. Mind blown… right? In this class, Chef Nate will teach macaronage, the folding/mixing procedure of making the perfectly textured macaron shell. Students will then work together to make different creams, custards, and garnishes to make their macalongs not only taste spectacular but also be ready for the cover of Pastry Arts magazine.

In class, students will work collectively to take home 4 incredible macalongs and gain the confidence to make their own creations at home.
