Class Description

This classic French Gourmet Cake is one of Blandine’s favorite. In this class, we will show you 2 versions of it: the classic Coffee Opera cake and a Grand Marnier version that is perfect for those who do not like coffee. It is made with layers of (orange) almond sponge cake soaked in coffee syrup (or Grand Marnier syrup), layered with ganache and coffee (or Grand Marnier) buttercream, and covered in a chocolate glaze. The taste is just amazingly delicious! You will of course be using Belgian chocolate and gourmet coffee. This cake will please anyone who tries it. This is also an ideal cake for large parties, quantities can be easily multiplied to feed 50 people! Everyone will leave with 1 cake of each type, serving a total of 8 people. Many techniques learned during this class can be used for other pastry needs. Due to the technicality of this class, we highly recommend you have taken other baking classes before this one. We also strongly recommend eating beforehand as you will take your cake home.
