Class Description

New for 2024! They say, “The Devil is in the Details”… wait I’m thinking of the wrong Seitan. Devilish or not this meat substitute is easy to make, simple to flavor (with the right tricks), and as versatile as its meaty counterparts. In class, we will learn how to make Seitan, a vegan meat substitute made from wheat gluten, and manipulate it in multiple ways to span international borders and flavor profiles, plus a couple of riffs on American classics. Students will enjoy the Larb salad, a dish originally from Laos and made with ground meat, at the end of class and will take the remainder of the food home.
