Fill a deep sided skillet with ¼ inch of oil over medium heat. Once the oil is hot, you can dip one of the dauphines into the oil and see if it bubbles. If it does, you can fill the pan with a single layer of dauphines. Turn them in the pan every 30 seconds for 3 minutes or until they are golden brown on all sides.
Boil and Sear:
Bring 3 quarts of water to boil in a 6 quart or larger pot. Add the Dauphines to the boiling water. The Dauphines will begin to float and expand. Boil for 2 minutes. Remove from water with a slotted spoon and transfer to a bowl with enough oil in it to coat them. Melt 3 tablespoons of butter in a large skillet. Once melted, add the boiled dauphines to the skillet. Sauté for three minutes while turning regularly.
In the Oven:
Preheat your oven to 350 degrees. Spread the frozen Dauphines over a parchement-lined baking sheet and brush them with oil. Bake for 7 minutes. Flip the dauphines over and brush them with oil again. Bake for an additional 7-10 minutes until they are warmed through and golden brown.
