Dauphine Potatoes – FZ

$7.25 $5.08

We had fun developing a variety of Dauphine Potatoes or Pommes Dauphines. They are crisp potato puffs made of mashed potatoes with savory choux pastry. They are typically round but we changed their shape, not their flavor. They come raw so you can deep-fry them and pair them with so many things: meat, salad, appetizers, fish, breakfast egg, basically anything!

*See below for other ways to cook them if you do not want to deep-fry them.

5 varieties to choose from.
Frozen. 35-40 pieces per container of 250 g. Suggested serving: 2-3 people (about 12 potatoes per serving).

B’s little story: I used to buy them in the frozen section of any grocery store in France but when I moved here, I started to make my own since I could not buy them anymore. I was so happy with the results, frying them in a skillet. However, the day I bought a fryer, that changed the way I looked at these tiny, heavenly round puffs! They really need to be deep-fried to get the ultimate texture.

*Other cooking options:

Pan fry:

Fill a deep sided skillet with ¼ inch of oil over medium heat. Once the oil is hot, you can dip one of the dauphines into the oil and see if it bubbles. If it does, you can fill the pan with a single layer of dauphines. Turn them in the pan every 30 seconds for 3 minutes or until they are golden brown on all sides.

Boil and Sear:

Bring 3 quarts of water to boil in a 6 quart or larger pot. Add the Dauphines to the boiling water. The Dauphines will begin to float and expand. Boil for 2 minutes. Remove from water with a slotted spoon and transfer to a bowl with enough oil in it to coat them. Melt 3 tablespoons of butter in a large skillet.  Once melted, add the boiled dauphines to the skillet. Sauté for three minutes while turning regularly.

In the Oven:

Preheat your oven to 350 degrees. Spread the frozen Dauphines over a parchement-lined baking sheet and brush them with oil. Bake for 7 minutes. Flip the dauphines over and brush them with oil again. Bake for an additional 7-10 minutes until they are warmed through and golden brown.
