These 100% Grade A Porcine Gelatin Sheets, or Leaves, are a pastry professionals must-have for mousses, molded desserts, or other delicate confectionaries. This type of gelatin is easier to measure and provides a clearer, higher quality gel and cleaner flavor profile than powder gelatins. Can be used as a stabilizer, thickener, or texturizer in foods such as jams, yogurt, cream cheese, and margarine or for the clarification of juices and vinegar.
